Why buy canned cranberry sauce laden in BPA when you can make your own! It's so quick and easy, let it be a part of your next holiday gathering!
Ingredients:
4 cups organic fresh cranberries
2 cups water
2 cups organic sugar (I actually prefer to use less, you could use 1 cup sugar, and substitute some orange juice for some of the water)
Place cranberries and water in a pot and bring to a boil. As soon as it comes to a boil, cover the pot and reduce to medium. Cook until the cranberries have burst. Puree cranberries in a blender or food processor. Pour back into the pot and stir in sugar. Bring to a rolling boil. Remove from heat and let set for at least 30 minutes. Place in the refrigerator if you like your cranberry sauce cold.

Herb Balsamic Tomatoes
Yummy, healthy, side dish. appetizer, or snack. My kids gobble these up!
Picture above is one tomato. I personally consider that one serving, but others may not. So I will write the recipe for one tomato/serving. Multiply as needed!
Ingredients:
1 tomato, sliced
A couple fresh basil leaves, chopped
A couple fresh mint leaves, chopped
A couple fresh parsley leaves, chopped
A pinch of fresh dill
Sea salt and ground pepper to taste
A drizzle of balsamic vinegar, organic
A drizzle of extra virgin olive oil, organic
Lay sliced tomatoes on a plate. Sprinkle with herbs, salt, and pepper. Drizzle with vinegar, and then oil. Enjoy!

Yorkshire Pudding
If you've never had Yorkshire Pudding, it's nothing like pudding. It's more of an airy fluffy muffin/biscuit. My grandmother used to make these. They were always my favorite part of the meal. She would make them with roast beef and gravy. Always a great meal to me! Very few ingredients, but oh SO tasty! Above is a double batch of the below recipe.
Ingredients:
3/4 cup white unbleached flour, organic
1/2 ts salt.
1/2 cup organic milk
2 large eggs, beaten
1/2 cup water
Approx. 1/2 stick melted butter, organic
Have all ingredients at room temperature. Preheat oven to 400 degrees. In a large bowl, mix together flour and salt. Make a well in the center and pour in milk. Stir. Beat in eggs and water. Beat the batter until large bubbles rise to the surface. If you wish, the batter can be refrigerated for an hour and beat again. Pour about 1/4 inch of hot melted butter into each space in a muffin tin. Heat the muffin tin in the oven until hot. Pour the batter in filling each space about half full. Bake for 20 minutes. Reduce heat to 350 degrees and bake 10-15 minutes longer, until puffed and golden brown. Serve with gravy. Yum!

Mango Guacamole
A unique take on the standard guacamole. Try it with tortilla chips or just by the spoonful!
Ingredients:
1 mango, diced
1 avocado, diced
1 green onion, chopped
Pinch of sea salt
2 ts evoo
1/2 cumin
Gently toss all ingredients together. That's it...super easy!
Quinoa Tabouli
Quinoa is so very good for you with 8 grams of protein, 5 grams of fiber, 4 grams of fat in a one cup serving. It is a gluten-free grain, so it's great for everyone. You can use it in place of rice on most recipes. Tabouli or Tabbouleh usually calls for bulgar wheat. This is a yummy side or main dish. Enjoy!

Guacamole Egg Rolls
This is a variation of a recipe I saw at www.mommybistro.com She has some great comfort food recipes, you should check it out.
These are fun! Serve them with a side of salsa. As for the egg roll wrappers, I found egg roll/spring roll wrappers in the frozen section but after reading the ingredients I put them back. I would have put them back just for the fact that bleached white flour was the first ingredient, but scroll down a little and there was propylene glycol (aka anti-freeze, ick). Then there was Sodium Benzoate, which is a pretty bad preservative. So I went over to the Japanese isle and they had some spring roll wrappers with something like 4 ingredients, none of which were a deal breaker, so I got those. The only hitch with those is they are hard and crispy. I had some in my house a few years ago that I could not figure out how to use. Everytime I tried to wrap anything they would snap. Now, if you know how to use these you're probably shaking your head at me right now. If you don't, you have to soak them in water for a few before you try to wrap anything. Boy did that make an amazing difference =) The first thing I ever successfully wrapped with them were bananas, chocolate, and almond butter...THAT was super yummy! Though I've learned since then to use more than one wrapper for each roll so they are less likely to tear while wrapping and cooking. This recipe will call for two wrappers for each roll, feel free to use more, honestly three might be better, adjust accordingly. A ton come in the package I got so I didn't even come close to using them all. Here's a pic of the ones I got:
Ingredients: (Makes 8 egg rolls)
16 egg roll or spring roll wrappers (Please read the ingredient label!!!)
2 avocados, diced
1 medium tomato, diced
1/2 organic onion, chopped
Handful of cilantro, chopped
1/2 ts sea salt
1 organic egg, beaten
Coconut or olive oil for searing or deep frying (See instructions below)
In a large bowl, gently stir together avocado, tomato, onion, cilantro and salt.
Fill a plate with water and place 2 wrappers in the water to soak for a minute. Remove from water and place on a sheet of wax paper. Place a couple of scoops of avocado mixture down the middle.
Fold the bottom flap up a quarter to halfway up the mixture. Brush the beaten egg along all the edges.
Fold the top flap down, and roll up. Repeat with all rolls.
Now at this point, you could go ahead and deep fry them if you so desire. If you do, coconut oil would be the healthiest choice.
Or, you could heat a skillet with about 2 TB of coconut oil. Sear all sides of the roll, and place roll on a baking sheet. Repeat with all rolls. Bake at 400 degrees for 20-30 minutes, flipping half way through.

Caprese Salad
I love Caprese Salad! So do my kids! They cheer when I set it on the table. Now you can totally make this the pretty way by slicing your tomatoes in rings, placing a basil leaf and slice of cheese on top and then drizzling with the dressing. But for my family, I would need like 5 plates done like that for how much they eat of it. Do you know how long that would take? Just for them to gobble them right up. So I just mix it all up in one big bowl. Not as pretty presentation-wise, but oh so yummy!
Ingredients:
5 medium organic tomatoes, sliced
1 8oz chunk of fresh mozzarella
20 or so basil leaves, chiffon (put leaves in one pile, roll them up, and slice)
3:1 oil to vinegar (you need about a 1/2 cup total)
Olive oil, organic
White Wine vinegar, organic
1/2 ts sea salt
3 cloves organic garlic, chopped
In a measuring cup mix together oil, vinegar, salt, garlic, and basil leaves. In a large bowl mix together tomatoes and mozzarella, toss with dressing.

Ricotta Stuffed Hot Peppers
A couple weeks ago we went to the Garlic Festival. This always so fun. The food is always so good. We always have to try a little of everything..well we've never tried the garlic sprinkles on ice cream, but I must draw the line somewhere ;) This year one of the booths had a spicy stuffed pepper that was so yummy I HAD to try to recreate it. And I did! I used Hungarian wax peppers which are moderately spicy. Though I think that may be an "average" because some were only a little spicy and some made we want to rip my tongue off. But the spice went away and I was happy with the result! Feel free to use a less spicy pepper. It would be good in banana peppers too. Though I have to say, I decided to leave the seeds in to make them spicier, I won't be doing that next time. It worked well for the ones that were only a little spicy but made the more spicy ones a little hard to handle. But whatever pepper you decide to use, make these, soon!
Ingredients:
8 Hungarian wax peppers, organic if you can find it, I couldn't
8 oz ricotta, organic
1/4 cup shredded parm, organic
1 cup shredded mozzarella, organic
1/2 ts ground pepper
4 cloves organic garlic, minced
1/2 ts sea salt
Preheat the oven to 400 degrees. Mix together everything but the peppers in a medium bowl. Cut the end off the peppers at an angle to release the seeds and membrane, like this:
Pull gently on the stem so it lifts out the seeds. Hopefully it looks like this: (If not, just scrape the seeds out)
There are a couple ways you can get the filling in. You can use a butter knife and push it down in until it's full.
You could also use a zip lock bag, fill with mixture, seal, and cut a corner off , squeeze down in. Either way, it should look like this when you're done:
Place them all in a baking dish and bake for 30 minutes at 400 degrees.

Grilled corn on the cob
There is no better way to cook corn on the cob than on the grill! So yummy...and Easy!!!
Directions:
Don't husk. Soak in water for a couple hours before you're ready to grill. I use a big pot like this:
Get your grill ready. If you have multiple levels in your grill you'll want it up on the shelf. If you don't, then don't put it on the grill until the coals are settled down and not their hottest. They'll need to grill for about an hour, so plan ahead.
After it's done grilling you can husk it....but it will be SUPER hot so you may want to wait awhile. Just be warned. It will husk much easier than it does before it's cooked. The silk comes right off with the husk.
Slather with butter, salt and pepper or however you prefer it, and ENJOY!

Baked Beans
Just in time for your Labor Day bbq, homemade baked beans!!! Yum!
Ingredients:
1 organic onion, chopped
2 tb oil, I used coconut oil
2 ts dry mustard
4 cups organic pinto beans, cooked
1/2 cup bbq sauce, I used Trader Joes natural bbq sauce
1/2 ts sea salt
2 tb mollasses
2 ts apple cider vinegar, I like Braggs
1/2 cup water
Cook onions, dry mustard, and oil in an oven proof pot. Cook until onions are translucent. Add the rest of the ingredients and stir. Cover pot and cook in a 350 degree oven for 1 hour.

Rosemary roasted potatoes
These are wonderful potatoes! There's never any leftovers for the chickens, yes they ARE that good! I made these yesterday aside a rotisserie chicken I made in my new toaster oven. Fabulous!
Ingredients: 8 servings
5 potatoes, chopped into one inch pieces
4 TB evoo
1 ts sea salt
1 TB dried rosemary
1 ts garlic powder
Preheat oven to 400 degrees. Line a cookie sheet with parchment paper. Spread out potatoes on cookie sheet. Drizzle evoo over the potatoes and toss. Sprinkle the rest of the ingredients over the potatoes and toss again. Cook for 30-40 minutes, check after 30 minutes. Enjoy!

Mexican Corn Salad
This is a very light and refreshing salad. The flavors burst in your mouth! Impress your family and friends with this colorful salad.
Ingredients:
4 ears organic corn, cut off the cob (If corn on the cob is not available, organic canned corn can be used)
3 tomatoes, chopped. (Or one package of grape tomatoes, sliced in half)
1 bunch green onions, chopped
1 handful cilantro, chopped
2 organic red peppers, chopped (If you can find organic orange peppers that would add another color)
Dressing:
1/4 cup olive oil
Juice of one lime
Juice of one lemon
2 TB chopped cilantro
1 ts parsley
1/4 ts chili powder
1/2-1 ts sea salt (start with less and add more if you think it needs it)
Blend dressing together and pour over salad, toss.

French Onion Soup
I could eat french onion soup every single day. Seriously. I could. But sadly I don't. But when I make this recipe there is enough for me to eat a bowl everyday for about a week. That makes me super happy =) This can be made in the crock pot or stove. I prefer the crockpot, but that means I have to start it in the morning. I only forgot to once, so I made it on the stove. Tastes great either way, but I think with the crockpot the taste is bolder because it's cooked for so long. Try it, you'll love it!
Ingredients:
4 TB organic butter
3 large sweet onions
2 cartons organic beef broth (I use Pacific, unless I have homemade broth in the freezer, I use that. You need about 50-60 oz)
1 TB sugar, organic
1/2 cup cooking sherry
1 ts sea salt
1 ts Worcestershire sauce, organic if you can find it
1 slice of bread for each bowl (I just use plain 'ol sandwich bread because it's easy and I always have it, but feel free to french bread)
1 slice of provolone, preferably organic, for each bowl.
Directions:
Whether using the stove or crockpot the directions are the same, just cooking time will be different. Melt the butter in the bottom of crockpot (on high) or pot on medium. Slice onions into rings or half rings (I prefer half rings for some reason). Throw the onions in the pot with the butter and toss. Add the broth, sugar, sherry, salt, and worcestershire. For the crockpot, cook on low 10-12 hours, or on high 6-8 hours. On the stove you'll want to cook for atleast an hour (bring to boil and then simmer). If you can let it simmer longer than an hour please do. You'll know it's done when the onions are translucent.
Toast bread until hard but not burnt. Place bowls on a cookie sheet. Ladle soup into bowls. Lay a piece of bread in each bowl and top with a piece of cheese. Put under broiler for a few minutes. Stay close and keep an eye on it. You want it melted and bubbly....a little brown is good but don't let it burn. Very carefully remove from broiler and use potholders to serve. This recipe makes a lot of soup, I'm talking maybe 12 servings. So it'll feed a crowd, or you'll have tons of leftovers (smile). But you can also pretty easily cut the recipe in half. Juice of one lemon
1 TB dried oregano
1 ts sea salt
4 cloves of organic garlic, chopped
Optional: 4 ounces feta, chopped (Separate directions below)
Place all ingredients in a bowl or large measuring cup and whisk. Slowly add the oil while whisking. Let sit for atleast 30 minutes before serving for flavors to mingle. Taste-too tangy for your taste, add some more olive oil, a little at a time. Store in fridge. Fresh garlic in olive oil at room temperature will grow botulism, not good.
Directions with feta. Place all ingredients except oil and feta in a blender. Add oil in a thin stream while mixing at a low speed. Add feta, blend for about 30 seconds. Again, let sit for flavors to mingle, and then store in fridge to avoid the whole botulism thing.
For a quick greek salad while flavors are mingling:

2 TB Braggs liguid aminos (or organic soy sauce, NEVER non-organic)
1 TB ground organic ginger (fresh can be used if you have it, add 2-3 TB)
2 ts wasabi powder
3 TB organic sugar (I prefer sucanat. Just never use white refined sugar for anything...except a craft project ;)
1 TB sesame seeds
1/2 cup organic sesame oil
1 bag pre-shredded red cabbage
6 cups chopped romaine, organic
1 cup shredded carrots, organic
1 cup diced pineapple
1 cup diced mango
2 cups diced cooked chicken, organic
1 cup cooked chow mein noodles
Whisk together vinegar, braggs or soy sauce, ginger, wasabi powder, sugar, and sesame seeds in a small bowl until well blended. While whisking, pour oil into bowl in a thin stream. Set aside.
In a large bowl, toss together cabbage, romaine, carrots, pineapple, mango, chicken, and noodles. Pour dressing over mixture and toss gently. Serve.

Veggie Rolls
I love Japanese food! Since moving to western NY from California, there is definitely a lack of great restaurants. I was very happy to learn how to make veggie rolls (like california rolls minus the un-kosher fish)
You will need:
Half a Cucumber, sliced very very thin
One Avocado, sliced thin
Sprouts, optional
A couple pieces of nori (roasted seaweed, available in the Japanese section at the grocery store)
One batch of sushi rice (see below)
3 tb, Wasabi powder, (please don't buy premade wasabi, awful awful ingredients!)
3 tb, Water
Sushi mat (amazon sells them)
Plastic wrap
Sesame seeds
First, make a batch of sushi rice:
2 cups, sushi rice. Lundberg makes an awesome organic non-gmo one!
2 cups, water
2 tb rice vinegar
2 tb sugar
1 tb salt
Place the rice into a fine strainer and run cool water over it. Continue until the water runs through clear.
Place the rice and 2 cups of water into a medium saucepan and place over high heat. Bring to a boil, uncovered. Once it begins to boil, reduce the heat to the lowest setting and cover(please don't forget to turn the temp down...your pot will thank you later...may mine rest in peace). Cook for 15 minutes. Remove from the heat and let stand, covered, for 10 minutes.
Combine the rice vinegar, sugar and salt in a small bowl and heat in a small pot for a few minutes until warm. Transfer the rice into a large wooden or glass mixing bowl and add the vinegar mixture. Fold thoroughly to combine and coat each grain of rice with the mixture. Allow to cool to room temperature before using to make sushi or sashimi. Continue to fold periodically until cool. You can also fan it with a paper plate, or a Japanese fan if you so happen to have one.
While the rice is cooking and cooling, prepare your veggies.
Cover your sushi mat in plastic wrap. Now I'm not keen on this, I don't like plastic wrap touching my food at all. Maybe wax paper would work, I don't know (let me know if you try it). If you really want to avoid this, you can make your rolls with the nori on the outside. I don't like the first thing I taste to be seaweed, so I put my nori on the inside. Here's how I do it:
Lay your sushi mat on the counter. Cut nori in half lengthwise. Lay nori on top of sushi mat, shiny side down. Spread 1/2-1 cup of sushi rice to cover nori. Sprinkle sesame seeds over rice. Flip it over so rice is now facing down. (to avoid using plastic wrap, skip this step) Lay pieces of cucumber, avocado, and sprouts all along the nori lengthwise. While holding veggies in place with your fingers, use mat to roll into a cylinder. Give it a couple squeezes all over. Unroll and set roll aside under a damp cloth on a cutting board. Repeat with the rest of the rice and fillings. Once done, lay all the rolls next to each other and use a long knife to cut into individual rolls (each roll should make 6 small ones).
Prepare wasabi. Taking equal parts of water and wasabi powder, mix together in a small bowl. Cover and set aside for 10 minutes. Organic soy sauce is widely available for dipping. I also like to Braggs Liquid Aminos. I don't consume soy normally, but organic fermented soy is the best choice for consuming soy.
Note: It may take a few times practicing making the rolls so they actually look like rolls instead of sandwiches, so don't plan to make this the first time for a dinner party =)
